TVP/Walnut "taco Meat”

  • 1 cup TVP (textured vegetable protein)

  • 1 cup boiling veggie broth (or water but the broth adds more flavor)

  • 1/2 cup walnuts; finely chopped

  • 1 tbsp soy sauce (or tamari for gluten free)

  • 1 tbsp olive oil (or use water for oil free)

  • 2 tsp chili powder

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 onion powder

  • 1/4 tsp dried oregano

  • salt & pepper to taste

    *optional: 1 tbsp tomato paste or salsa for extra richness

    1. Rehydrate the TVP:

    • In a bowl, combine TVP with boiling veggie broth (or water) and soy sauce. Let it sit for about 5 minutes until all liquid is absorbed.

    2. Toast the walnuts:

    • In a skillet over mediu, heat, add walnuts and toast for 2-3 minuts until fragrant. Remove from skillet and set aside.

    3. Cook the “meat”:

    • In the same skillet, add olive oil.

    • Add the hydrated TVP, toasted walnuts and all of the spices (Plus the tomato paste or salsa if you’re using it)

    • Stir well and cook for 5-7 minuts, until slightly crispy and brown

    4. Taste and adjust:

    • Add more seasoning, salt or a splash of lime juice if needed.
