TVP/Walnut "taco Meat”
1 cup TVP (textured vegetable protein)
1 cup boiling veggie broth (or water but the broth adds more flavor)
1/2 cup walnuts; finely chopped
1 tbsp soy sauce (or tamari for gluten free)
1 tbsp olive oil (or use water for oil free)
2 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
1/2 tsp garlic powder
1/2 onion powder
1/4 tsp dried oregano
salt & pepper to taste
*optional: 1 tbsp tomato paste or salsa for extra richness
1. Rehydrate the TVP:
In a bowl, combine TVP with boiling veggie broth (or water) and soy sauce. Let it sit for about 5 minutes until all liquid is absorbed.
2. Toast the walnuts:
In a skillet over mediu, heat, add walnuts and toast for 2-3 minuts until fragrant. Remove from skillet and set aside.
3. Cook the “meat”:
In the same skillet, add olive oil.
Add the hydrated TVP, toasted walnuts and all of the spices (Plus the tomato paste or salsa if you’re using it)
Stir well and cook for 5-7 minuts, until slightly crispy and brown
4. Taste and adjust:
Add more seasoning, salt or a splash of lime juice if needed.
