Corn Salsa
2 Cups of corn; either fresh off the cob, frozen or can.
(If you get it from the can, I suggest to get the one without salt. I prefer frozen sweet corn for this recipe.)
1/4 cup cilantro, finely chopped
1/4 cup red onion, chopped
2 tbsp fresh jalapeño, finely chopped
1 tbsp fresh lime juice
1 tbsp fresh lemon juice
1/2 tsp salt
Mix it all together and let it chill for about 30 minutes to 1 hour or just eat afterwards. But if you wait, the seasonings are able to dance and mend together to create more flavor.
